Stuffed mushrooms offer a variety of health benefits, combining the nutritional virtues of mushrooms with a flavorful and nutrient-dense filling. Mushrooms are a low-calorie food rich in essential nutrients such as vitamins B and D, selenium, and antioxidants. The stuffing, often composed of ingredients like spinach, garlic, onions, and breadcrumbs, adds fiber, vitamins, and minerals to the dish.
Ingredients:
- 250g mushrooms, cleaned and stems removed
- 1 cup chopped spinach
- ¼ cup chopped onion
- ¼ cup tomatoes
- ½ tbsp ginger-garlic paste
- 2 cloves garlic
- 2 tbsp oil
- Salt and pepper to taste
- Cooking spray
Instructions:
Prepare the Mushrooms:
- Preheat the air fryer to 375°F (190°C).
- Clean the mushrooms and remove the stems. Set aside.
Prepare the Filling:
- In a pan, heat 1 tablespoon of olive oil over medium heat.
- Add chopped onion and garlic, sautéing until softened.
- Add chopped spinach and cook until wilted. Season with salt and pepper.
- Remove the mixture from the heat and let it cool.
Stuff the Mushrooms:
- Lightly spray the air fryer basket with cooking spray.
- Take each mushroom cap and stuff it with the spinach mixture, pressing down gently to pack the filling.
- Arrange the stuffed mushrooms in a single layer in the air fryer basket.
- Drizzle the remaining olive oil over the stuffed mushrooms.
- Air fry at 375°F (190°C) for about 10-12 minutes or until the mushrooms are tender and the filling is golden brown.
Serve:
- Once done, remove the stuffed mushrooms from the air fryer and let them cool for a few minutes.
- Serve as an appetizer or snack.
