Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (14 oz each) diced tomatoes
  • 2 cups vegetable or chicken broth
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1/2 cup fresh basil leaves, chopped
  • 1/4 cup heavy cream
  • Grated Parmesan cheese

Instructions:

Sauté Onions and Garlic:

  • Heat the olive oil in the multi-purpose kettle over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 3-4 minutes.

Add Tomatoes:

  • Pour in the diced tomatoes (including their juices) into the kettle. Stir to combine with the onions and garlic.

Simmer with Broth:

  • Add the vegetable or chicken broth to the kettle. Stir well, then bring the mixture to a simmer. Let it cook for about 10-15 minutes to allow the flavors to meld together.

Season and Blend:

  • Once the soup has simmered, season it with salt, pepper, and sugar (if using), to taste. Using an immersion blender directly in the kettle, blend the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender and blend until smooth, then return it to the kettle.

Add Basil and Cream:

  • Stir in the chopped fresh basil leaves. If desired, add the heavy cream to the soup for added creaminess and richness. Stir well to combine.

Adjust Consistency:

  • If the soup is too thick, you can add a bit more broth to reach your desired consistency. If it's too thin, you can simmer it for a few more minutes to reduce and thicken.

Serve:

  • Ladle the hot Tomato Basil Soup into bowls. Garnish with grated Parmesan cheese and a few extra basil leaves for presentation.
